In 1996 the Santos family, traditional farmers and stock breeders, launched the traditional cheese shop Cañarejal. Since then they have specialised in making artisan raw sheep´s milk cheese, effectively controlling the process from beginning to end. From caring, feeding and milking their flock of 2,000 sheep, to finally making cheese from the raw sheep´s milk.
Cañarejal is the name of our settlement, located on the banks of the River Duero, in the Riberas de Castronuño Nature Reserve. A natural environment covered with varied vegetation, and dominated by aromatic plants, giving the milk, which is later transformed into cheese, a natural flavour.
