Cheese made with raw sheep´s milk, which has been ripened over months. The rind is treated with oil giving it a distinctive reddish brown colour.
COLOUR:Â Straw yellow interior from rind to centre. Does not crumble when cut.
TEXTURE:Â Firm but melts in the mouth, maintaining the freshness of a young cheese.
FLAVOUR:Â An elegant, fruity flavour, reminiscent of the natural environment in which the milk was produced. A long-lasting taste, which does not distort the palate.
AROMA:Â Reminds us of the aromatic plants from our pastures.
RENNET:Â Made with lamb rennet.
