Después de montar Poncelet, una de las mejores tiendas de quesos de España, su mentor e ideólogo, Jesús Pombo, dio paso a nuevos proyectos. Primero organizó unas cavas de maduración modélicas en las que afina los quesos hasta que alcanzan puntos de evolución óptimos. Después inauguró en Madrid Cheese Bar, un bar de quesos, donde se degustan algunas de las piezas emblemáticas del mundo. Quesos que mantiene en una cava climatizada a la vista con humedad y temperatura controlada, y presenta en tablas bien diseñadas con las explicaciones pertinentes, incluidos su procedencia, meses de maduración, tipos de leche, caracterÃsticas sensoriales y armonÃas con vinos especÃficos. Poncelet controla todo el proceso, desde la selección de las piezas en origen hasta su servicio.
Este mismo concepto —bar de quesos— se acaba de replicar en Barcelona. Siempre fiel a su empeño cultural y formativo. Y como complemento, una cocina al queso con notas creativas (falsos ñoquis de queso zamorano, croquetas, risotto de setas). En Barcelona ha abierto con dos novedades exclusivas, la selección de quesos catalanes y la de quesos americanos.

They didn’t object, but they did need someone, so maybe they just pushed that aside, thinking fall was coming and it wouldn’t be a concern for a while. I don’t know, just a thought.Either way, things did work out for the best. This whole thing pushed me to do something that I was considering anyway. It was time and I needed a sign. I got one.
